Spoon Bread

Spoon Bread is a delightful mix between a custard and a bread made out of cornmeal.  Great paired with soup or stew, as a side grain, or even as a dessert with a little sweetener added.  Let us know your favorite way of serving it!

 

Scald 1 quart of milk.  Whisk in 1 cup of corn meal gradually. Cook until thick over low heat.  In a separate bowl, beat 3 egg yolks.  Pour small amount of thickened corn meal over the egg yolks, then add them to the rest of the corn meal mixture.  Return to heat and cook a few minutes longer.  Add 2 Tablespoons of butter and fold in 3 beaten egg whites.  Pour the entire mix into a greased baking dish and cook at 325 degrees for  1-1/2 hours.  Stir once after the first 15 minutes of cooking.  We prefer it served warm.
