Wheatberry Salad

Wheatberry Salad

Place 1 c. hard red wheat berries in 3 cups boiling salted water

Cook over low heat about 45 minutes, until soft.

Saute 1 c. finely diced onion in 2 Tbsp. olive oil until translucent.  Turn off heat and add 1/4 cup olive oil and 2 Tbsp balsamic vinegar.

Combine in large bowl: warm wheat berries, sautéed onions, 3 minced scallions or leeks, diced 1/2 red bell pepper, diced 1 small carrot, 1/4 tsp. salt and some pepper.

Let sit 30 minutes.  Serve at room temperature.
